Zero is less powerfull than other pi, but it's consuming less, so battery can last longer.
I did not tried all the different systems on the pi zero! I think everything up to gameboy advance run very smoothly. N64 will probably be laggy (but I did not tried though)

The best way is to use wires to connect to the GPIO of raspberry pi zero. And put the module elsewhere in the casing. There'll be enough place for them I think.
I will have a look at wifi/bluetooth modules

The only GPIO used is 18 and 13 for audio output. The GPIO17 has a pogo pin on it (because pogos come in pairs) but is not connected to anything, so you could still use it. So it should be ok to use the SDIO I would say! I did not knew that ESP8266 on SDIO. It seems to be only working on short dista...
