Sorry i am not clear about the problem you having .. Do you mean when you open N64 roms , your screen became Black and White ?

Hi can you try remap your gamepad by pressing start, then “configure input” then remap all buttons.
Notes :
To skip unused buttons you need to hold 3s A button.
Hotkey button is select by default. It’s the button that enable you to quite games “start + select” is in fact “start + hotkey”.

Default setting is HDMI first and if there is no HDMI connected, signal goes on composite.

I am actually not sure, I don't know all emulator perfectly. Best is to ask Retrorangepi team because they have a better knowledge on the software end.
