Game Boy Classic emulation (newbie)

Hi guys, I'm a Game Boy enthusiast and I would like to buy the Retrostone 1 console, because it is perfect for playing the games of GB Classic and GB Color, despite the screen resolution (I don't think it can be a problem for them). I would like to ask you some questions, certainly trivial, but of which I would like to be sure before purchasing. On YouTube I saw that the Color or Classic games are widened across the entire width of the screen: is it possible to play these games while maintaining the original ratio? Is it possible to change the color of the Classic games screen? Choose between gray scale, different shades of green, or other simple combinations as it happens in RetroArch?
